This is such a simple porridge recipe, so easy to make and so good for you.
In true The Organic Cookery style I will give you a bit of background on why this has health benefits.
So, oats…contain natural sedatives which can help sooth nerves and help in the treatment of depression, anxiety and insomnia without having side effects. They are also easy to digest as they contain very little anti-nutrients (remember in my about section I was mentioning that certain types of grains, especially whole grains contain anti-nutrients which makes them very difficult to digest and can promote the appearance of irritable bowel syndrome). Oats contain a gummy like water-soluble fibre called beta-glucan which help in making sure blood sugar levels are kept under control (useful for diabetes) and the same fibre quickly reduces “unhealthy” cholesterol. On top of this they contain magnesium which helps regulate insulin secretion and antioxidants unique to this grain that reduces the risk of cardiovascular disease.
Porridge can be quite boring but there are so many combinations, toppings you can do it will be impossible to get bored.
So to make 1 portion:
- 4 heaped table spoons of rolled organic oats;
- almond milk
- 1 plum cut into segments
- 1/2 an apple cut into segments
- 3-4 cloves
- sprinkle of cinnamon
- organic raspberries you have in the freezer and you left to defrost and now quite soggy:)
- a squeeze of lemon juice
- teaspoon of almond butter
- optional cocoa beans
Pour almond milk so it tops the oats 0.5cm above. Gently heat the oats, milk, plum and apple segments, cloves and cinnamon. Do not let it boil and whisk constantly until it starts thickening. Whisk for about 4 min and add almond milk if the mixture tends to become to dry..it needs to look quite oozy and silky…and falling off you spoon rather than sticking together. Mixing constantly over a low heat will help you achieve this.
Mash the raspberries with a bit of lemon juice until creates a vibrant sauce.
Put your porridge in a bowl. Top with raspberry mess:), almond butter and crushed cocoa beans.
